Trader Joe's Baked Lemon Ricotta Cheese

TJ’s cheese department can be dangerous. You could easily blow your grocery budget just by looking at all the options. Good cheese isn’t cheap and it’s becoming more expensive. I avoid them all the time. This is why I have appointed Sonia, the lovely Resident Fromager de Chateau Rodgers.

This item seems to have been around for quite a while. It was not something I knew. This shows how much time I spend in Trader Joe’s cheese area. It would have been easier to get it sooner, since I am more of a lemonophile that my wifey…but fruit-flavored cheeses are not something I gravitate towards. It is mild cheese with a small amount of lemon flavor. It is not a dessert food.

It is creamy and almost spongy. It is soft and supple and not too dense. The rind of the cheese is firmer and darker than the inner parts of the wedge. You might not be able to see the actual cheese in the image.

This would work well in baking. By baking this mixture into bread and topping it with lemon curd or another citrusy icing, you can easily make lemon pastry.

Surprisingly Sonia loved this cheese more than me. Sonia enjoyed it plain. Both of us enjoyed it on crackers. It went well with most neutrally-flavored crackers such as butter crackers and water crackers. It would have clashed with garlicky or seeds-flavored crackers.

Next time we will have to be more creative in the kitchen, and see if our baking skills are sufficient to make something delicious. Sonia has given us four stars. Three and a quarter stars from me.
